SPICY BBQ COCKTAIL MEATBALLS

INGREDIENTS
  • 1 1/2 pounds lean ground beef
  • 1 1/2 pounds lean ground pork
  • 2 cups finely crushed barbecue potato chips
  • 1 cup shredded pepper jack cheese
  • 1/2 4 ounce can diced jalapeño peppers drained
  • 2 large eggs beaten
  • 1 18 ounce bottle sweet 'n tangy spicy barbecue sauce

DIRECTIONS

In large bowl, combine beef, pork, potato chips, cheese, jalapeños and eggs; salt and pepper as desired. Mix by hand or with spoon until well combined.

Shape mixture into 1¼-inch meatballs. Place on 2 greased large baking sheets. Bake in a preheated 400°F oven until cooked through and lightly browned, turning over halfway through (about 15 minutes).

Transfer cooked meatballs to a 5-quart or larger slow cooker. Cover with barbecue sauce and simmer on low for several hours.
