SOUTHWEST BLACK BEAN DIP

INGREDIENTS
  • 1 15 ounce can black beans rinsed and drained
  • 1 ripe avocado peeled and pitted
  • 1 14.5 ounce can diced tomatoes with chile, onion & cilantro drained
  • 2 cups shredded Monterey Jack cheese divided
  • 1/2 cup sour cream
  • - tortilla chips

DIRECTIONS

Place beans and avocado in a large bowl; using a potato masher, smash until semi-smooth.

Stir in tomatoes, 1 cup cheese and sour cream; salt to taste. Transfer to a 1-quart baking dish. Top with remaining cheese.

Bake in a preheated 400°F oven 20 minutes or until bubbly and cheese is melted. Serve with tortilla chips.
