SPICY SHRIMP CORN CHOWDER

INGREDIENTS
  • 1/2 cup chopped onion
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 1 pound uncooked shrimp peeled and deveined
  • 1 15.25 ounce can whole kernel corn undrained
  • 1 15 ounce can sliced new potatoes drained
  • 1 14.5 ounce can diced tomatoes with green chiles undrained
  • 1 cup reduced sodium chicken broth
  • 1/2 cup hot thick and chunky salsa
  • 1/2 cup fat free half & half

DIRECTIONS

In large saucepan, heat oil over medium heat. Add onions, cumin and cayenne; sauté until onions are softened (about 3-5 minutes).

Stir in remaining ingredients; bring to a simmer, stirring occasionally.

Reduce heat; simmer 10 minutes or until shrimp are opaque in color and cooked through, stirring occasionally.
