BEAN & CORN CHILI

INGREDIENTS
  • 1 tablespoon 100% pure olive oil
  • 1 cup chopped onion
  • 1 cup chopped green bell peppers
  • 1 15 ounce can reduced sodium black beans rinsed and drained
  • 1 15 ounce can reduced sodium pinto beans rinsed and drained
  • 1 15.25 ounce can no salt added whole kernel corn drained
  • 2 14.5 ounce cans no salt added diced tomatoes undrained
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1/2-1 teaspoon cayenne pepper

DIRECTIONS

In large saucepan or Dutch oven, heat oil over medium heat. Add onions and peppers; sauté until softened (about 3-5 minutes).

Stir in remaining ingredients. Bring to a boil.

Reduce heat; simmer until heated through (about 10-15 minutes).
