
BEAN & CORN CHILI



INGREDIENTS
- 1 tablespoon 100% pure olive oil
- 1 cup chopped onion
- 1 cup chopped green bell peppers
- 1 15 ounce can reduced sodium black beans rinsed and drained
- 1 15 ounce can reduced sodium pinto beans rinsed and drained
- 1 15.25 ounce can no salt added whole kernel corn drained
- 2 14.5 ounce cans no salt added diced tomatoes undrained
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1/2-1 teaspoon cayenne pepper
DIRECTIONS
In large saucepan or Dutch oven, heat oil over medium heat. Add onions and peppers; sauté until softened (about 3-5 minutes).
Stir in remaining ingredients. Bring to a boil.
Reduce heat; simmer until heated through (about 10-15 minutes).
