
STUFFED BEETS



INGREDIENTS
- 1/4 cup Culinary Circle Soft Goat Cheese or cream cheese, softened
- 1/4 cup chopped walnuts
- 2 tablespoon chopped fresh chives
- 1 15 ounce can whole pickled beets drained
DIRECTIONS
In a small bowl combine cheese, walnuts and chives. Carve a hole halfway deep into the top of each beet.
Stuff beets with cheese mixture; place 1 stuffed beet in each cup of a 12 count muffin pan.
Bake in a preheated 400°F oven until cheese is melted (about 10 minutes).
