
SAUTÉED ASPARAGUS
with Walnuts, Cranberries & Lemon



INGREDIENTS
- 1 tablespoon 100% pure olive oil
- 1/2 cup walnut pieces
- 1/2 cup sweetened dried cranberries
- 1 14.5 ounce can no salt added whole asparagus drained
- 1 teaspoon lemon zest
- - juice of 1 lemon
DIRECTIONS
In large skillet, heat oil over medium-high heat. Add walnuts and cranberries; sauté until walnuts are slightly browned and fragrant (about 1-2 minutes).
Add in the asparagus; gently sauté until heated through (about 1-2 minutes).
Remove from heat. Stir in lemon zest and juice; salt and pepper to taste.
