SHRIMP CAPRI APPETIZERS

INGREDIENTS
  • 18 frozen 16-20 count peeled & deveined tail-on cooked shrimp thawed
  • 3/4 cup balsamic vinaigrette dressing divided
  • 6 large Roma tomatoes
  • 1 8 ounce package Culinary Circle Fresh Mozzarella Ball
  • 18 fresh basil leaves

DIRECTIONS

In small bowl, toss shrimp with ½ cup vinaigrette; set aside.

Slice tomatoes diagonal, creating 18 slices; place slices on a serving platter. Sprinkle tomatoes with salt and pepper.

Slice mozzarella into 9 slices and each slice in half; place on tomatoes.

Top with basil leaves and shrimp. Drizzle remaining ¼ cup vinaigrette over tomatoes.
