
CHORIZO & BEAN CON QUESO



INGREDIENTS
- 1/2 pound ground chorizo sausage
- 1/2 cup chopped onion
- 1 15 ounce can pinto beans rinsed and drained
- 1 10 ounce can diced tomatoes with mild green chiles undrained
- 8 ounces Super Cheezy processed cheese spread loaf, cubed
- 2 cups shredded colby jack cheese
- 1/2 cup half & half
- 1 chipotle pepper in adobo sauce chopped
- - tortilla chips
DIRECTIONS
In medium skillet over medium-high heat, cook and crumble chorizo and onions until cooked through and no longer pink; drain.
Transfer to a slow cooker. Add remaining ingredients and stir to combine.
Cook on LOW 1-2 hours or until melted and bubbly, stirring occasionally. Turn slow cooker to warm to serve. Serve with tortilla chips.
