
CAPRESE RICE CAKES



INGREDIENTS
- 6 salt free rice cakes
- 6 tablespoons onion & chive cream cheese spread
- 3 slices fresh mozzarella cheese cut in half
- 6 tomato slices
- 6 fresh basil leaves
- 1 tablespoon 100% pure olive oil
DIRECTIONS
Spread each rice cake with 1 tablespoon cream cheese.
Place ½ slice mozzarella and tomato on each rice cake; top with basil leaves.
Drizzle with olive oil; salt and pepper to taste.
