CAPRESE RICE CAKES

Serves : 6 rice cakes

INGREDIENTS
  • 6 salt free rice cakes
  • 6 tablespoons onion & chive cream cheese spread
  • 3 slices fresh mozzarella cheese cut in half
  • 6 tomato slices
  • 6 fresh basil leaves
  • 1 tablespoon 100% pure olive oil

DIRECTIONS

Spread each rice cake with 1 tablespoon cream cheese.

Place ½ slice mozzarella and tomato on each rice cake; top with basil leaves.

Drizzle with olive oil; salt and pepper to taste.
