
BLACK BEAN & CORN GUACAMOLE



INGREDIENTS
- 2 ripe avocados pitted, peeled and diced
- 1 15 ounce can black beans rinsed and drained
- 1 10 ounce can diced tomatoes with green chiles, lime juice & cilantro drained
- 1 cup frozen super sweet corn thawed and drained
- 1 tablespoon fresh squeezed lime juice
- 1/2 teaspoon minced garlic
DIRECTIONS
In large mixing bowl, combine all ingredients; salt and pepper to taste.
Mash to desired consistency.
Serve immediately or refrigerate, covered with plastic wrap directly in contact with guacamole, up to 1 hour ahead.
