TOMATO SUCCOTASH

INGREDIENTS
  • 1 tablespoon pure vegetable oil
  • 1 16 ounce package frozen succotash thawed
  • 1 14.5 ounce can diced tomatoes with garlic & onion undrained
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon Louisiana hot sauce
  • 1 tablespoon fresh squeezed lemon juice
  • 1 teaspoon lemon zest

DIRECTIONS

In large skillet, heat oil over medium heat.

Add succotash, tomatoes, Creole seasoning and hot sauce; sauté until heated through (about 10-15 minutes).

Stir lemon juice and lemon zest into succotash; salt and pepper to taste.
