VEGETABLE RICE PILAF

INGREDIENTS
  • 1 7.2 ounce package rice pilaf mix
  • 1/2 cup diced carrots
  • 1 tablespoon 100% pure olive oil
  • 1 3.5 ounce package shiitake mushrooms stems removed, sliced
  • 1/2 pound fresh asparagus cut into 1-inch pieces
  • 1/2 cup fancy shredded Italian style Parmesan cheese

DIRECTIONS

Prepare rice according to package directions, adding carrots with water.

Meanwhile, in medium skillet, heat oil over medium-high heat. Add mushrooms and asparagus. Sauté until mushrooms are softened.

Stir cheese, mushrooms and asparagus into rice.
