TACO RICE SKILLET

INGREDIENTS
  • 1 pound extra lean ground beef or turkey
  • 1 cup chopped onion
  • 1 14.5 ounce can reduced sodium chicken broth
  • 1 14.5 ounce can diced tomatoes with green chiles undrained
  • 1 10.75 ounce can condensed Cheddar cheese soup
  • 1 1.25 ounce packet taco seasoning mix
  • 2 cups instant white rice
  • 1 15 ounce can black beans rinsed and drained
  • 1 4.25 ounce can chopped ripe olives
  • - shredded mild Cheddar cheese
  • - sour cream

DIRECTIONS

In large skillet with high sides over medium heat, cook and crumble beef and onions until no longer pink; drain.

Add chicken broth, undrained tomatoes, soup and taco seasoning. Bring to a boil, stirring frequently.

Stir in rice, beans and black olives. Remove from heat and let stand 5 minutes, stirring occasionally. Top with shredded cheese and serve with sour cream, if desired.
