
SUN-DRIED TOMATO PESTO PENNE



INGREDIENTS
- 1/2 16 ounce package penne rigate
- 1 cup whole milk ricotta cheese
- 1/3 cup refrigerated pesto sauce
- 1/4 cup sun-dried tomatoes packed in oil
- 1/4 cup half & half
- - fancy shredded Italian style Parmesan cheese optional
- - toasted pine nuts optional
DIRECTIONS
Prepare pasta according to package directions; drain. Return to pan.
Meanwhile, in food processor or blender, combine ricotta, pesto and tomatoes; salt and pepper to taste. Process until well combined.
Add pesto mixture and half & half to pasta. Cook over medium-low heat until heated through, stirring frequently. Serve with Parmesan cheese and pine nuts, if desired.
