SOUTHWESTERN CORN MUFFINS

Serves : 24 muffins

INGREDIENTS
  • 3/4 cup quick oats
  • 1/2 cup 1% milk
  • 2 7.5 ounce packages corn muffin mix
  • 1 14.75 ounce can cream style corn
  • 1 4 ounce can diced green chiles
  • 1/4 cup shredded mild Cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder

DIRECTIONS

In small bowl, combine oats and milk; let stand 10 minutes.

Meanwhile, in large mixing bowl, prepare corn muffins according to package directions. Add oats with milk and remaining ingredients; stir until just combined. Let stand 5 minutes.

Divide among 2 (12 count) greased or paper lined muffin pans. Bake in a preheated 375°F oven 18-20 minutes or until toothpick inserted in center comes out clean.
