
CORN & WHITE CHEDDAR BISCUITS



INGREDIENTS
- 2 1/2 cups all-purpose biscuit & baking mix
- 6 tablespoons cold butter divided
- 1 10 ounce package frozen super sweet corn thawed
- 1 cup shredded white mild Cheddar cheese
- 1/2 cup sour cream
- 1/4 cup buttermilk
- 1/2 teaspoon garlic powder divided
- 1/2 teaspoon ground black pepper
DIRECTIONS
In large bowl, combine biscuit mix and 4 tablespoons cold butter; using a pastry blender or 2 forks, cut butter into biscuit mix until butter is pea size.
Add corn, cheese, sour cream, buttermilk, ¼ teaspoon garlic powder and black pepper; mix by hand, until just combined. Do not over mix.
Drop by large spoonfuls (about ¼ cup) onto an ungreased baking sheet. Bake in a preheated 400°F oven 15-17 minutes or until lightly browned.
Meanwhile, melt remaining 2 tablespoons butter; add remaining ¼ teaspoon garlic powder. Remove biscuits from oven and brush tops with garlic butter.
