ROASTED RED PEPPER RANCH DIP

Serves : 3 cups

INGREDIENTS
  • 2 cups cooked dried whole green peas
  • 1 8 ounce package Neufchatel cheese softened
  • 1 cup garbanzo beans rinsed and drained
  • 1 cup roasted red peppers
  • 1/2 cup 100% pure olive oil
  • 1 1 ounce packet dry ranch dip mix

DIRECTIONS

In a food processor or blender, combine all ingredients. Process until smooth and slightly fluffy, scraping sides.

Transfer to a serving dish. Serve with assorted vegetables, pita chips or pita bread.
