BEET BRUSCHETTA

INGREDIENTS
  • 1 loaf French baguette bread sliced 1/2-inch thick
  • 1 15 ounce can shoestring beets drained
  • 2 ripe avocados pitted, peeled and diced
  • 1 tablespoon chopped arugula
  • 1 tablespoon balsamic vinegar
  • 5 ounces spreadable herb & garlic cheese

DIRECTIONS

Place bread in single layer on large baking sheet. Bake in a preheated 425°F oven 5 minutes, turning over halfway through.

Meanwhile, in small bowl, combine beets, avocado, arugula and vinegar; mash to desired consistency.

Spread each slice with herb cheese; top with beet mixture.
