
BEET BRUSCHETTA



INGREDIENTS
- 1 loaf French baguette bread sliced 1/2-inch thick
- 1 15 ounce can shoestring beets drained
- 2 ripe avocados pitted, peeled and diced
- 1 tablespoon chopped arugula
- 1 tablespoon balsamic vinegar
- 5 ounces spreadable herb & garlic cheese
DIRECTIONS
Place bread in single layer on large baking sheet. Bake in a preheated 425°F oven 5 minutes, turning over halfway through.
Meanwhile, in small bowl, combine beets, avocado, arugula and vinegar; mash to desired consistency.
Spread each slice with herb cheese; top with beet mixture.
