WHITE CHICKEN CHILI

INGREDIENTS
  • 1 1/2 pounds boneless, skinless chicken breasts cubed
  • 1 tablespoon chopped garlic
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • 1/2 16 ounce package dried great northern beans soaked, rinsed and drained
  • 2 cups no salt added chicken stock
  • 1 cup chopped onion
  • 2 (4 ounce) cans diced green chiles undrained
  • 2 tablespoons chopped organic fresh cilantro
  • - sour cream optional
  • - shredded Monterey Jack cheese optional

DIRECTIONS

In medium bowl, combine chicken, garlic, cumin, salt, chili powder and cayenne pepper; toss to coat.

Add seasoned chicken, beans, chicken broth, onions and chiles to a slow cooker. Cook on HIGH 4-6 hours or LOW 8-10 hours.

Stir in cilantro. Serve with sour cream and cheese, if desired.
