
VEGETABLE & PASTA SOUP



INGREDIENTS
- 1 teaspoon 100% pure olive oil
- 1/2 cup chopped onion
- 1/2 teaspoon chopped garlic
- 1/4 teaspoon Dried Basil Leaves
- 1/4 teaspoon dried thyme leaves
- 1 16 ounce package frozen soup vegetables
- 3 14.5 ounce cans vegetable broth
- 1 15 ounce can light red kidney beans rinsed and drained
- 2 cups uncooked whole wheat penne rigate
DIRECTIONS
In medium saucepan, heat oil over medium-high heat.
Add onions, garlic, basil and thyme; salt and pepper to taste. Sauté until onions are softened (about 3-4 minutes).
Add remaining ingredients. Bring to a boil; reduce heat and simmer 15 minutes or until pasta is tender.
