VEGETABLE & PASTA SOUP

Serves : 2-3 servings

INGREDIENTS
  • 1 teaspoon 100% pure olive oil
  • 1/2 cup chopped onion
  • 1/2 teaspoon chopped garlic
  • 1/4 teaspoon Dried Basil Leaves
  • 1/4 teaspoon dried thyme leaves
  • 1 16 ounce package frozen soup vegetables
  • 3 14.5 ounce cans vegetable broth
  • 1 15 ounce can light red kidney beans rinsed and drained
  • 2 cups uncooked whole wheat penne rigate

DIRECTIONS

In medium saucepan, heat oil over medium-high heat.

Add onions, garlic, basil and thyme; salt and pepper to taste. Sauté until onions are softened (about 3-4 minutes).

Add remaining ingredients. Bring to a boil; reduce heat and simmer 15 minutes or until pasta is tender.
