
TUSCAN BEAN SOUP



INGREDIENTS
- 1/2 16 ounce package dried great northern beans with ham seasoning soaked, rinsed and drained
- 2 tablespoons 100% pure olive oil
- 1 cup chopped onion
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1 tablespoon minced garlic
- 4 cups chicken broth
- 1 cup minced ham
- 2 teaspoons chopped fresh rosemary
- 1/2 cup fancy shredded Italian style Parmesan cheese
DIRECTIONS
In large saucepan or Dutch oven, heat oil over medium heat. Add onions, carrots, celery and garlic; sauté until onions are softened (about 3-5 minutes).
Add chicken broth and beans; bring to a boil. Reduce heat; simmer until beans are softened (about 11½ hours).
Add ham and rosemary; salt and pepper to taste. Continue simmering until heated through. Serve with Parmesan cheese.
