TUSCAN BEAN SOUP

INGREDIENTS
  • 1/2 16 ounce package dried great northern beans with ham seasoning soaked, rinsed and drained
  • 2 tablespoons 100% pure olive oil
  • 1 cup chopped onion
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1 tablespoon minced garlic
  • 4 cups chicken broth
  • 1 cup minced ham
  • 2 teaspoons chopped fresh rosemary
  • 1/2 cup fancy shredded Italian style Parmesan cheese

DIRECTIONS

In large saucepan or Dutch oven, heat oil over medium heat. Add onions, carrots, celery and garlic; sauté until onions are softened (about 3-5 minutes).

Add chicken broth and beans; bring to a boil. Reduce heat; simmer until beans are softened (about 1–1½ hours).

Add ham and rosemary; salt and pepper to taste. Continue simmering until heated through. Serve with Parmesan cheese.
