
THREE BEAN CHILI



INGREDIENTS
- 2 tablespoons Culinary Circle Extra Virgin Olive Oil
- 1 medium yellow onion chopped
- 1 green bell pepper chopped
- 1 red bell pepper chopped
- 2 15 ounce cans crushed tomatoes
- 2 10 ounce cans diced tomatoes with mild green chiles undrained
- 1 15 ounce can pinto beans rinsed and drained
- 1 15 ounce can black beans rinsed and drained
- 1 15 ounce can light red kidney beans rinsed and drained
- 1 1.25 ounce packet chili seasoning mix
- 1/4 teaspoon cayenne pepper optional
DIRECTIONS
In large saucepan or Dutch oven, heat oil over medium heat. Add onions and peppers; sauté until onions are translucent (about 5-7 minutes).
Add remaining ingredients; bring to a boil.
Reduce heat and simmer 15 minutes, stirring occasionally.
