
SWEET PEA SOUP



INGREDIENTS
- 1 tablespoon 100% pure olive oil
- 1 cup chopped onion
- 1 tablespoon chopped garlic
- 4 cups frozen green peas
- 4 cups reduced sodium chicken broth
- 3 fresh thyme sprigs
- 1/2 cup half & half
DIRECTIONS
In large saucepan or Dutch oven, heat oil over medium heat. Add onions and garlic; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes).
Add peas, chicken broth and thyme sprigs. Bring to a boil; reduce heat and simmer 8-10 minutes or until peas are very tender, but not mushy.
Remove and discard thyme sprigs. In batches, purée soup in a food processor or blender.
Return soup to pan and bring to a simmer; add half & half and continue simmering until heat through. Salt and pepper to taste.
