SPICY BUFFALO CHICKEN CHILI

INGREDIENTS
  • 2 tablespoons pure vegetable oil
  • 1 pound boneless, skinless chicken breasts cubed
  • 1 14.5 ounce can diced tomatoes with garlic & onion undrained
  • 1 1.25 ounce packet chili seasoning mix
  • 1 16 ounce package frozen fiesta blend vegetables thawed
  • 1 15 ounce can dark red kidney beans rinsed and drained
  • 2 cups reduced sodium chicken broth
  • 1/2 cup Buffalo wing sauce
  • 3/4 cup blue cheese dressing

DIRECTIONS

Heat oil in large saucepan or Dutch oven over medium-high heat. Add chicken, tomatoes and chili seasoning; stir to coat chicken. Sauté 5 minutes.

Add vegetables, beans, chicken broth and wing sauce. Bring to boil; reduce heat and simmer 10-15 minutes or until vegetables are heated through.

Stir in dressing; serve.
