QUICK & EASY BEAN SOUP

INGREDIENTS
  • 1/2 16 ounce package bacon chopped
  • 1 cup chopped onion
  • 1 tablespoon chopped garlic
  • 2 15 ounce cans blackeye peas rinsed and drained
  • 1 15 ounce can mixed vegetables undrained
  • 1 14.5 ounce can chicken broth
  • 1 14.5 ounce can chopped mustard greens undrained
  • - cayenne pepper optional

DIRECTIONS

In large saucepan or Dutch oven over medium heat, sauté bacon until crisp; remove to paper towels.

Add onions and garlic to bacon drippings; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes).

Stir in remaining ingredients and cayenne pepper to taste; bring to a boil. Reduce heat; simmer 10 minutes. Stir in bacon.
