
QUICK & EASY BEAN SOUP



INGREDIENTS
- 1/2 16 ounce package bacon chopped
- 1 cup chopped onion
- 1 tablespoon chopped garlic
- 2 15 ounce cans blackeye peas rinsed and drained
- 1 15 ounce can mixed vegetables undrained
- 1 14.5 ounce can chicken broth
- 1 14.5 ounce can chopped mustard greens undrained
- - cayenne pepper optional
DIRECTIONS
In large saucepan or Dutch oven over medium heat, sauté bacon until crisp; remove to paper towels.
Add onions and garlic to bacon drippings; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes).
Stir in remaining ingredients and cayenne pepper to taste; bring to a boil. Reduce heat; simmer 10 minutes. Stir in bacon.
