SPICY PENNE WITH SAUSAGE

INGREDIENTS
  • 1 13.25 ounce package whole wheat penne rigate
  • 1 pound bulk spicy Italian sausage
  • 2 tablespoons 100% pure olive oil
  • 1 8 ounce package sliced button mushrooms
  • 1 red bell pepper chopped
  • 2 tablespoons chopped garlic
  • 1/2 teaspoon crushed red pepper
  • 1 cup half & half
  • 1 medium tomato seeded and diced
  • 1 cup fancy shredded Italian style Parmesan cheese

DIRECTIONS

Prepare pasta according to package directions; drain. Meanwhile, in large skillet, cook and crumble sausage over medium-high heat until no long pink; drain. Set aside. Wipe out skillet.

In same skillet, heat oil over medium-high heat. Add mushrooms, red pepper, garlic and red pepper flakes; salt and pepper to taste. Sauté until mushrooms and peppers are tender (about 5-7 minutes).

Add half & half. Bring to a boil; boil 1 minute. Add pasta, sausage, tomatoes and Parmesan cheese. Toss to coat.
