
SLOW COOKER CREAMY RICE



INGREDIENTS
- 2 tablespoons pure vegetable oil
- 1 cup chopped onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 tablespoon chopped garlic
- 2 teaspoons dried thyme leaves
- 8 cups reduced sodium chicken broth
- 3 10.5 ounce cans cream of chicken soup
- 4 cups long grain white rice
DIRECTIONS
In large skillet, heat oil over medium heat. Add onions, carrots, celery, garlic and thyme; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes).
Transfer vegetable mixture to a 6-quart or larger slow cooker. Add broth, soup and rice; stir.
Cook on HIGH 6-8 hours or until rice is tender, stirring occasionally.
