SKILLET TACO MAC

INGREDIENTS
  • 1/2 16 ounce package elbow macaroni
  • 1 pound extra lean ground beef
  • 1/2 cup chopped onion
  • 1 15 ounce can black beans rinsed and drained
  • 1 14.5 ounce can diced tomatoes undrained
  • 1 cup whole kernel corn
  • 1 cup thick and chunky salsa
  • 1 1.25 ounce packet taco seasoning mix
  • 1 1/2 cups shredded colby jack cheese divided
  • 1/2 cup sour cream

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in large skillet, over medium heat, cook and crumbled ground beef and onions until no longer pink; drain.

Stir in black beans, undrained tomatoes, corn, salsa and taco seasoning. Bring to a boil; reduce heat and simmer 5 minutes.

Stir in 1 cup cheese, sour cream and cooked pasta. Sprinkle with remaining cheese; serve immediately.
