SAUSAGE RAVIOLI

with Blue Cheese-Walnut Sauce

INGREDIENTS
  • 1 25 ounce package frozen sausage ravioli
  • 1 tablespoon 100% pure olive oil
  • 1/2 cup sliced red onion
  • 1 tablespoon chopped garlic
  • 1/8 teaspoon cayenne pepper optional
  • 1 cup half & half
  • 1/3 cup Culinary Circle Blue Cheese Crumbles
  • 1/3 cup fancy shredded Italian style Parmesan cheese
  • 1 cup chopped fresh spinach leaves
  • 1/2 cup chopped walnuts toasted

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in large skillet, heat oil over medium heat. Add onions, garlic and cayenne pepper; salt and pepper to taste. Sauté until onions are caramelized (about 3-5 minutes).

Add half & half, blue cheese and Parmesan cheese to skillet, stirring to combine. Bring to a boil; reduce heat and simmer until cheese is melted and sauce has thickened (about 5-7 minutes); stirring frequently. Remove from heat. Stir in pasta, spinach and walnuts.
