SAUSAGE & MUSHROOM TORTELLINI

INGREDIENTS
  • 1/2 pound bulk hot Italian sausage
  • 1 3.5 ounce package shiitake or button mushrooms sliced
  • 1 tablespoon dried parsley flakes
  • 2 teaspoons chopped garlic
  • 1 12 ounce package frozen cheese tortellini
  • 1 cup half & half
  • 1/2 cup fancy shredded Italian style Parmesan cheese
  • 1 medium tomato chopped

DIRECTIONS

In large skillet over medium heat, cook and crumble sausage; add in mushrooms, parsley and garlic when sausage is almost done. Continue cooking until mushrooms are softened and sausage is no longer pink; drain.

Meanwhile, prepare pasta according to package directions; drain.

Add half & half and cheese to sausage mixture; simmer until slightly thickened, stirring occasionally. Salt and pepper to taste. Add pasta and tomatoes to sauce; toss to coat.
