QUICK & EASY JAMBALAYA

INGREDIENTS
  • 2 bags boil-in-bag white rice
  • 1 tablespoon pure vegetable oil
  • 1 14 ounce package Polska kielbasa ring cut into 1/4-inch slices
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 14.5 ounce can diced tomatoes undrained
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme leaves
  • 1/4-1/2 teaspoon cayenne pepper

DIRECTIONS

Prepare rice according to package directions.

Meanwhile, in large saucepan, heat oil over medium-high heat. Add sausage, onions and peppers; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes).

Stir in undrained tomatoes, garlic powder, thyme and cayenne pepper. Stir in cooked rice; bring to a simmer. Simmer until thickened (about 3-5 minutes).
