
CHEEZY BROCCOLI & RICE CASSEROLE



INGREDIENTS
- 1 cup long grain white rice
- 1/4 cup butter divided
- 1 cup chopped onion
- 1 cup evaporated milk
- 1/2 pound Super Cheezy processed cheese spread cubed
- 1 16 ounce package frozen cut broccoli thawed and drained
- 1 sleeve snacker crackers crushed (about 36 crackers)
DIRECTIONS
Prepare rice according to package directions. Meanwhile, in large saucepan over medium heat, melt 2 tablespoons butter. Add onions and sauté until softened (about 3-5 minutes).
Add milk and cheese; salt and pepper to taste. Cook, stirring frequently, until cheese is melted. Add broccoli and cooked rice; stir until well combined. Transfer to a greased 2-quart baking dish.
Bake in a preheated 350°F oven 20 minutes. In small microwave-safe bowl, melt remaining 2 tablespoons butter; toss with crushed crackers. Sprinkle over casserole and continue baking 10 minutes or until bubbly and golden brown.
