SOUTHERN EGG SCRAMBLE

INGREDIENTS
  • 1/2 (16 ounce) chub mild pork sausage
  • 1/2 (16 ounce) package frozen chopped collard greens thawed
  • 1/4 cup diced onion
  • 1 teaspoon minced garlic
  • 8 large eggs beaten
  • 1 cup fancy shredded mild Cheddar cheese
  • 1/2 cup medium thick and chunky salsa

DIRECTIONS

In large skillet over medium heat, cook and crumble sausage, collard greens, onions and garlic until no longer pink; drain off grease. Remove from pan; set aside.

Pour eggs into skillet. Allow egg mixture to begin setting; slowly pull spatula across egg mixture, allowing uncooked eggs to run under cooked eggs.

Stir in sausage mixture, cheese and salsa when eggs are about half done. Continue stirring, allowing cheese to melt and eggs to set. Serve immediately.
