QUICK & EASY CORNED BEEF HASH

INGREDIENTS
  • 2 tablespoons pure vegetable oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1 pound frozen potato rounds
  • 2 cups cooked and chopped corned beef
  • - eggs optional

DIRECTIONS

In large skillet, heat oil over medium heat. Add onions and peppers; salt and pepper to taste. Sauté until onions are softened (about 3-5 minutes).

Add in potato rounds and corned beef. Sauté, slightly breaking up potato rounds, until cooked through and desired doneness is reached.

Serve with fried eggs, if desired.
