BRUSCHETTA

with Fresh Tomatoes and Basil

INGREDIENTS
  • 2 garlic cloves divided
  • 2 cups seeded and chopped tomatoes
  • 1/4 cup chopped fresh basil leaves
  • 1 teaspoon balsamic vinegar
  • 1 loaf French baguette bread sliced 1/4-inch thick
  • - 100% extra virgin oil olive no-stick cooking spray
  • 1 cup shredded fat free mozzarella cheese

DIRECTIONS

Mince 1 clove garlic and place in a medium bowl. Add tomatoes, basil and vinegar to bowl; salt and pepper to taste. Toss to combine; set aside.

Place baguette slices on a large baking sheet. Spray tops with cooking spray. Bake in a preheated 375°F oven 8-10 minutes or until golden brown.

Remove from oven. Using a fork to pierce remaining garlic clove, rub garlic over the top of bread slices. Sprinkle with cheese and return to oven. Continue baking until cheese has melted (about 3-4 minutes).

Remove from oven; top with Bruschetta.
