SOUTHWESTERN EGG ROLLS

INGREDIENTS
  • 1 cup diced cooked chicken
  • 1 cup frozen western style vegetables
  • 1/2 cup black beans rinsed and drained
  • 1-2 tablespoons chopped jalapeño peppers
  • 1 tablespoon + 2 teaspoons taco seasoning mix divided
  • 3/4 cup shredded Monterey Jack cheese
  • 6 6-inch flour tortillas
  • 1/2 cup sour cream
  • - juice of 1/2 a lime
  • 1 tablespoon chopped fresh cilantro
  • - vegetable oil no-stick cooking spray

DIRECTIONS

In large skillet over medium heat, combine chicken, vegetables, beans and jalapeños; cook until heated through, stirring occasionally.

Stir in ¼ cup water and 1 tablespoon taco seasoning; cook 2 minutes. Remove from heat; stir in cheese. Divide mixture among tortillas; roll-up burrito style.

Place, seem-side-down, on a medium baking sheet that has been generously sprayed with cooking spray. Spray tops of tortillas with additional cooking spray. Bake in a preheated 450°F oven 10-12 minutes or until golden brown.

Meanwhile, in small bowl, combine sour cream, lime juice, cilantro and remaining 2 teaspoons taco seasoning. Serve with egg rolls.
