
YOGURT GANACHE COVERED STRAWBERRIES



INGREDIENTS
- 1 cup crushed organic animal crackers
- 6 ounces dark chocolate chips
- 1/2 cup blended vanilla lowfat yogurt
- 1 pound fresh strawberries cleaned and dried
DIRECTIONS
Place crushed animal crackers in a shallow dish; set aside.
Using a double boiler or a heat-proof bowl over the top of a saucepan, fill bottom of pan halfway with water; bring to a boil. Cover with top of double boiler or bowl; reduce heat to simmer.
Add chocolate to top of double boiler or bowl. Continue heating until chocolate is melted, stirring occasionally. Remove from heat. Add yogurt to melted chocolate and stir until well combined and smooth.
Dip one strawberry in chocolate and roll in crushed animal crackers; set on waxed paper lined baking sheet. Repeat with remaining strawberries.
Refrigerate strawberries until chocolate is firm (about 30 minutes). Store in airtight container in refrigerator.
