
QUICHE FLORENTINE



INGREDIENTS
- 1/2 15 ounce package refrigerated pie crust (1 crust)
- 1 tablespoon organic extra virgin olive oil
- 4 cups chopped organic baby spinach
- 1 cup chopped onion
- 1 teaspoon freshly ground natural sea salt
- 1/4-1/2 teaspoon organic ground cayenne pepper
- 2 cups shredded Swiss cheese
- 5 organic large brown eggs
- 1 1/2 cups organic 2% reduced fat milk
DIRECTIONS
Prepare crust according to package directions in a deep pie plate; do not bake. Set aside.
In large skillet, heat oil over medium-high heat. Add spinach, onion, salt and cayenne; sauté until all liquid is absorbed. Remove from heat; cool slightly.
Sprinkle 1 cup cheese on bottom of pie crust. Top with spinach mixture and remaining cheese. Place on a baking sheet.
In medium bowl, combine eggs and milk; whisk until well combined. Pour over filled pie crust. Bake in a preheated 375°F oven 40-50 minutes or until knife inserted in center comes out clean. Remove from oven and allow to stand 5-10 minutes before serving.
