BLACKBERRY LEMON PARFAIT

INGREDIENTS
  • 1 3.4 ounce package instant lemon pudding & pie filling
  • 1 3/4 cups 2% milk
  • 2 cups frozen blackberries thawed
  • 1/3 cup granulated sugar
  • 1 tablespoon chopped fresh mint leaves
  • 2 teaspoons lemon zest
  • 1/8 teaspoon salt
  • 16 ginger snaps

DIRECTIONS

Prepare pudding according to package directions using 1¾ cups milk; let stand 5 minutes.

In medium bowl combine, blackberries, sugar, mint, lemon zest and salt.

Crush 2 cookies into the bottom of each of 4 parfait or wine glasses. Top with ½ pudding and ½ berry mixture. Repeat layers, ending with berries.

Refrigerate until ready to serve.
