CHICKEN & MUSHROOM PENNE

INGREDIENTS
  • 1/2 13.25 ounce package whole wheat penne rigate
  • 2 tablespoons 100% pure olive oil
  • 1 8 ounce package sliced baby bella mushrooms
  • 1 cup sliced red onion
  • 1 tablespoon minced garlic
  • 1/4 cup dry sherry or chicken broth
  • 3 cups torn Culinary Circle Deli Rotisserie Chicken
  • 1 cup half & half
  • 1 cup fancy shredded Italian style Parmesan cheese
  • 1 tablespoon chopped fresh thyme leaves

DIRECTIONS

Prepare pasta according to package directions; drain.

Meanwhile, in large skillet, heat oil over medium-high heat. Add mushrooms, onions and garlic; salt and pepper to taste. Sauté until softened and slightly browned (about 5 minutes).

Add sherry and simmer until reduced by half. Stir in chicken, half & half, cheese and thyme; bring to a boil. Reduce heat and simmer 5 minutes. Stir in pasta and continue simmering until sauce is thickened.
