
CHEESY RICE
with Chicken & Broccoli



INGREDIENTS
- 1 3/4 cups 2% milk divided
- 1 cup long grain white rice
- 1 tablespoon 100% pure olive oil
- 1 pound boneless, skinless chicken breasts cut into 1-inch pieces
- 1 16 ounce package frozen cut broccoli
- 1/2 32 ounce loaf Super Cheezy processed cheese spread cubed
- 2 tablespoons butter
DIRECTIONS
In large saucepan, prepare rice according to package directions using 1 cup milk for 1 cup water.
Meanwhile, in large skillet, heat oil over medium-high heat. Add chicken; salt and pepper to taste. Sauté until cooked through and slightly browned.
Add broccoli and continue sautéing until heated through; transfer to saucepan with cooked rice. Add in remaining milk, cheese and butter. Cook, stirring frequently, until cheese is melted and heated through.
