
STUFFED CHICKEN BREASTS
Wrapped in Bacon



INGREDIENTS
- 6 (6 ounce) boneless, skinless chicken breasts
- 1 8 ounce package Neufchatel cheese softened
- 1 tablespoon chopped fresh thyme leaves
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh oregano leaves
- 1 tablespoon chopped garlic
- 12 slices bacon partially cooked
- - toothpicks
DIRECTIONS
Pound chicken breasts to ¼-inch thick; set aside. In medium bowl, combine Neufchâtel, herbs and garlic; salt and pepper to taste.
Divide cheese mixture evenly among chicken breasts. Roll-up chicken tucking in ends. Wrap each breast in 2 slices of bacon. Secure with toothpicks. Place in a greased 13x9-inch baking dish.
Bake in a preheated 400°F oven 35 minutes or until chicken reaches 170°F and juices run clear.
