
CHICKEN & RICE CASSEROLE



INGREDIENTS
- 2 cups instant brown rice
- 1 10.5 ounce can 98% fat free cream of chicken soup
- 1 16 ounce container light sour cream
- 1/2 cup skim milk
- 2 10 ounce cans chicken breast with rib meat in water drained
- 1 16 ounce package frozen mixed vegetables
- 1 cup shredded mild Cheddar cheese
- 1 6 ounce container French fried onions
DIRECTIONS
Prepare rice according to package directions. Meanwhile, in large bowl, combine soup, sour cream and milk; salt and pepper to taste.
Stir in chicken, vegetables, cheese, ½ of fried onions and rice. Transfer to a greased 13x9-inch baking dish.
Bake in a preheated 375°F oven 30 minutes or until heated through and bubbly. Sprinkle top with remaining fried onions and continue baking 5 minutes or until onions are golden brown.
