STUFFED ITALIAN MEATBALLS

INGREDIENTS
  • 1/2 pound bulk hot Italian sausage
  • 1 14.5 ounce can no salt added diced tomatoes with oregano, garlic & basil drained
  • 1/2 cup chopped onion
  • 2 teaspoons Italian seasoning
  • 1 teaspoon chopped garlic
  • 2 cups cooked medium grain white rice
  • 1 large egg beaten
  • 16 (1/2-inch) cubes mozzarella cheese
  • 2 cups crispy Panko style plain bread crumbs

DIRECTIONS

In large skillet over medium heat, cook and crumble sausage, tomatoes, onions, Italian seasoning and garlic until no longer pink; drain well. Remove from heat; cool slightly.

Stir in rice and egg. Form meat mixture around cheese cubes into golf ball sized meatballs; roll in bread crumbs.

Place meatballs on large baking sheet that has been sprayed with cooking spray. Bake in a preheated 375°F oven 20 minutes or until golden brown.
