
COCOA PEANUT BUTTER COOKIES



INGREDIENTS
- 1/2 cup SKIPPY® Super Chunk Peanut Butter
- 1/2 cup light brown sugar
- 1/2 cup + 2 tablespoons granulated sugar divided
- 1/4 cup Butter softened
- 1 large egg
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 2/3 cup semi-sweet chocolate chips melted
- 1/2 cup cocoa peanut butter spheres cereal crushed
DIRECTIONS
In large mixing bowl, combine peanut butter, brown sugar, 1/2 cup granulated sugar, shortening and butter. Using an electric mixer, beat on medium speed until creamed, scraping bowl. Add eggs and continue mixing until well combined.
Add in flour, salt and baking powder; continue mixing until well combined. Refrigerate for 30 minutes.
Roll dough into 1 1/2-inch balls; roll in remaining 2 tablespoons granulated sugar. Place 2 inches apart on an ungreased baking sheet. Flatten each ball by using a fork to make a criss-cross pattern.
Bake in a preheated 375 degree F oven 10-12 minutes or until lightly browned. Remove from oven and cool for 5 minutes on baking sheet. Transfer to a cooling rack and cool completely.
Dip one end of cookie into melted chocolate, and then dip into cereal. Place on wax paper covered baking sheet and refrigerate until chocolate hardens. Store in an airtight container in the refrigerator.
