
SHRIMP & SNAP PEAS



INGREDIENTS
- 1/4 cup less sodium soy sauce
- 1/4 cup teriyaki marinade & sauce
- 1 tablespoon fresh squeezed lime juice
- 2 teaspoons grated fresh gingerroot
- 2 cups instant white rice
- 2 cups fresh sugar snap peas trimmed
- 1 pound large uncooked shrimp peeled and deveined
DIRECTIONS
In small bowl combine soy sauce, teriyaki sauce, lime juice and ginger; set aside.
In large skillet over medium-high heat, combine rice and 2 cups water. Bring to a boil; reduce heat and simmer, covered, 2-3 minutes.
Add peas and sauce; cover and continue cooking until peas are tender (about 8-10 minutes), stirring occasionally.
Add shrimp; cover and continue cooking until opaque (about 3-4 minutes). Remove from heat and serve.
