VEGGIE PASTA SALAD

INGREDIENTS
  • 1 12 ounce package tri-color rotini
  • 1 14 ounce can quartered artichoke hearts drained
  • 1 6 ounce can small pitted ripe olives drained
  • 1 pint grape tomatoes halved
  • 1 medium cucumber seeded and chopped
  • 1 cup chopped red onion
  • 1/2 red bell pepper chopped
  • 1/2 yellow bell pepper chopped
  • 3/4 cup Italian dressing

DIRECTIONS

Prepare pasta according to package directions; rinse with cold water and drain.

In large bowl, combine cooled pasta, artichoke hearts, olives, tomatoes, cucumbers, onion and peppers; toss with dressing.

Refrigerate, covered, several hours or overnight.
