SHRIMP PASTA SALAD

INGREDIENTS
  • 4 cups rotini
  • 1/4 cup light mayonnaise
  • 1/4 cup light Italian dressing
  • 1 1/2 cups frozen salad shrimp thawed and drained
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1/2 cup diced tomatoes
  • 1/2 cup feta cheese crumbles
  • 1/4 cup sliced green onions
  • 1 tablespoon capers rinsed and drained

DIRECTIONS

Prepare pasta according to package directions; rinse with cold water and drain.

In large bowl, combine mayonnaise and dressing. Add cooled pasta and remaining ingredients; toss until well combined. Salt and pepper to taste.

Refrigerate, covered, 30 minutes or until ready to serve.
