CHOCOLATE COFFEE SNACK MIX

INGREDIENTS
  • 8 cups crunchy rice squares cereal
  • 1 cup roasted almonds
  • 1 tablespoon classic roast instant coffee
  • 1 teaspoon hot water
  • 1/2 cup butter
  • 2 cups semi-sweet chocolate chips
  • 1 teaspoon ground cinnamon
  • 3 cups powdered sugar
  • 1/2 cup baking cocoa

DIRECTIONS

Place cereal and almonds into a large 2-gallon recloseable food storage bag; set aside.

In a small microwave-safe bowl, stir coffee granules and water until coffee is dissolved. Stir in chocolate chips, butter and cinnamon. Microwave (HIGH) for 2 minutes, stirring after 1 minute, until mixture is melted and smooth. Pour over cereal; seal bag. Shake until all cereal is coated.

Add powdered sugar and cocoa powder; reseal bag. Shake gently until cereal is well coated. Spread in a single layer on waxed paper to cool. Store in an airtight container.
