
CAULIFLOWER POTATO PANCAKES



INGREDIENTS
- 1 16 ounce package frozen cauliflower florets
- 1/2 cup chopped onion
- 2 teaspoons chopped garlic
- 1 cup prepared instant mashed potatoes
- 2 large eggs
- 1 cup all-purpose flour
- 1/2 cup fancy shredded Italian style Parmesan cheese
- 1/8 teaspoon cayenne pepper
DIRECTIONS
Prepare cauliflower according to stovetop package directions, adding onions and garlic. Drain and chop finely.
Transfer to a large mixing bowl; add prepared potatoes, eggs and flour. Whisk until just combined; stir in cheese and cayenne pepper. Let stand 10 minutes.
Heat flat skillet over medium heat. Add about ΒΌ cup batter onto skillet, repeat to fill skillet. Cook 2-3 minutes per side or until golden brown.
